Chihuahua is a state capital and a manufacturing city at the same time, and you feel both walking it. The center is still the seat of government, quarry stone and offices, and a few minutes out the plants begin, where much of what the state ships north gets built.

This is high desert, and the weather runs things. Summers are dry and hard, winters bring real cold and the occasional snowfall. What people cook here shifts with the season far more than it does further south.

On the table the flour tortilla is the everyday one and beef leads: grilled, in discada, in a burrito. Mennonite cheese from the farm country out in the state goes into nearly everything, which gives home cooking a flavor that has little to do with the south.

Prepared food here grew up around shift work. In the Complejo Industrial colonia alone, roughly ten thousand people work across close to a hundred plants, and plenty of them finish at an hour when nobody wants to start cooking.

How long does it keep in the fridge?

Three to five days in a sealed container is normal. Anything with fish, or vegetables that arrive already dressed, gives you less and is worth eating first.

Can I freeze part of the plan?

Yes, and on a rotating shift that is the practical move. Stews, rice and meat in sauce freeze well; salads and raw vegetables do not. When the pack arrives, set aside straight away what stays in the fridge.

Does it work out dearer than cooking yourself?

On a single grocery run, yes. Over a month, rarely: you stop buying a kilo to use two pieces, vegetables do not spoil on you midweek, and the end-of-shift delivery orders stop.

Do they deliver to Complejo Industrial and the parks?

Several kitchens do, and some time the drop to shift changes rather than to lunch. Not all of them run out that far, so each business publishes how far it goes and at what hour instead of leaving you to ask.

Do they cover Aldama and Aquiles Serdán?

Some do. They are part of the metropolitan area and plenty of people work in the city and sleep out there, but it is a longer run and not everyone makes it. Check each kitchen zone before booking the week.

Is it all beef, or are there other options?

Both. The cooking here is beef and flour tortillas, and many businesses make exactly that because it is what people ask for. There are also kitchens working in controlled portions, vegetarian or gluten free, and they say so on the menu without you having to ask.

Does the winter cold change anything?

It changes the menu more than the service. When the cold sets in people want stews, broths and spoon food, and several businesses move the card with the season. Seeing the menus together shows who cooks for winter and who leaves it the same all year.
